The beets are here, but this time around it's for a sweet treat! One of the most nutritious vegetables, they are pulled in for one of our most traditional desserts—the halwa!

Ingredients
1 kg beetroot (grated)
1 l milk
300g sugar
100g ghee
Cardamom (powdered), a pinch
2tbsp dry fruits

Preparation
Squeeze the water out completely from the grated beetroots.
Mix the beetroots and milk in a heavy bottomed pan. Place this pan on a slow flame and keep stirring continuously.
When it has dried up well, add the sugar and continue to stir.
Add the ghee at regular intervals, a little at a time.
When it has dried well, add the powdered cardamom and remove from the fire.
Garnish with dry fruits. It can be served cold or hot.
