Cheera Thairu Pachadi

Colours are inviting not just on a palette, but on your plates as well; this savoury dish made with curd and red spinach, renders it a beautiful shade of purple. Just as healthy, it makes for a fulfilling lunch when paired with hot rice.

Ingredients
2 cups red spinach, finely chopped
1¼ tbsp oil
1 tsp mustard seeds
1 pinch fenugreek seeds
½ cup onions, finely chopped
½ cup green chillies, chopped in round shape
2 cups thick curd
Salt, as required

Preparation
Take an idli maker or appam container, and steam the red spinach in it
Take a pan and heat oil in it. Now, add mustard seeds, fenugreek seeds, onions, and green chillies into this. Saute well.
Then, take the red spinach that has been steamed and add it to this mixture. Saute well and take it out of the stove
When it cools down, add thick curd and salt to this and mix well
