It's Kerala's favourite way of making a chicken dish. The cooking method, known as ularthu, can be roughly translated as 'fry'. The chicken ularthu is a delight to try in the kitchen and then on your dining table!
Ingredients
½ kg chicken chopped to pieces
2 tbsp oil
3 large onions, cut lengthwise
1 piece ginger thinly cut lengthwise
5 green chillies cut lengthwise
Salt, as required
3 tomatoes
Preparation
Clean the chicken and keep aside
Pour oil in a flat pan, add onion, ginger, green chillies and salt, and sauté well
Once sautéed, add chicken pieces and let it cook
When the chicken pieces brown well, add the tomato pieces and sauté well
Take the chicken out of the stove when tender and not too dry
Garnish with fried curry leaves and serve
