Chicken with white wine and garlic

Moist chicken cooked with wine is a customary dish for Christmas. Add the tang of garlic to it for an added punch.

Ingredients
1kg chicken breast
¼ tsp salt
Pepper, as required
50gm flour
4 tbsp olive oil
12 shallots, halved
180gm mushrooms chopped
25gm butter
300ml dry white wine
1 cup chicken stock
4 cloves of garlic
2 bay leaf
2 sprigs of fresh thyme or ½ tsp dried thyme
Boiled baby potatoes and carrots for garnishing

Preparation
Preheat the oven at 200—¦ C
Clean the chicken breast and let it marinate in a salt, pepper and the white flour paste
In a big frying pan, heat 2 tbsp oil and sauté the shallots
When it turns golden brown, add the mushrooms and sauté for 2 minutes
In a baking dish with lid, add the sautéed vegetables
In the same pan, take the remaining oil and butter. Once this melts, fry the marinated chicken breast in this for 5 to 7 minutes
Fry till it turns brown. Add the fried chicken to the baking dish
Pour the wine into the pan and mix it with whatever gravy is left in the pan
Pour this wine mix on top of the chicken in the baking dish
Next, boil the chicken stock, the garlic cloves, bay leaf and the thyme
Pour this over the chicken too. Close the lid and bake the chicken in the oven for about 45 minutes to 1 hour till the chicken is cooked through
Boil the carrots and potatoes, lightly fry them and serve with the chicken dish
