Idli as such is a wholesome, enviably nutritious food, among the healthy clan of foods. Add to it some of the lentils, and you have a mildly flavoured, healthier version of the steamed breakfast goody!

Ingredients
2 cups par boiled rice
¾ cup split yellow gram/toor dal
¼ cup black gram/urad dal
Salt, as required

Preparation
Wash and soak the rice for two hours
Soak split yellow gram and black gram together for two hours
Grind the lentils until smooth and frothy
Grind rice to a grainy consistency
Mix the ground lentils and rice together, and add salt
Allow the batter to ferment for 15-20 hours
Pour the batter to the greased idli plates and steam cook until done
Serve hot with green chutney or chutney powder
