This sweet nosh from Malabar is a deliciously layered dish of coconut filling inside pancakes that are folded and shallow fried again!

Ingredients
For Pancake
1 cup plain flour
1 egg
Saffron
Salt to taste
Water
For Filling
2-3 eggs
3 tbsp sugar
3 tbsp raisins
3 tbsp chopped almonds
½ tsp cardamom powder
2 tbsp scraped coconut
1-2 tsp ghee
For shallow frying
1 egg
1 tbsp ghee
Preparation
In a bowl, take plain flour, beaten egg, salt and enough water and make a thin batter without any lumps and keep aside
To make the filling, first heat the pan. Add ghee to it and toss in the chopped almonds
Add the beaten eggs with sugar and cardamom powder and make a scramble
Heat another pan and pour 1 spoon full of batter to make a thin pancake
Place a small portion of the filling in the centre, fold its corners so that it resembles an envelope
Make a few more and keep aside
Now, heat a frying pan on medium flame, dip the envelope in egg mixture and shallow fry in ghee on both sides
