Phirni

This sweet thickened milk treat with ghee and nuts is the most delicious thing after a sumptuous meal. Phirni is basically Indian rice pudding. It's called different things in different places; it is kheer in Punjabi, Payasam in Malayalam and Tamizh, and firni or phirni in Muslim lingo.

Ingredients
250gm boiled white rice
1½ litre milk
200gm sugar
1 pinch cardamom powder
2 tsp chopped cashew nuts
2 tsp tutti frutti 
2 tsp raisins
2 tbsp ghee

Preparation
Add the cooked rice to the milk and boil
When the mixture thickens, add the sugar and cook again till it turns creamy
Add the cardamom powder and remove from the heat
In a serving bowl, garnish with the dry fruits, tutti frutti and ghee
It tastes best when chilled
