An appetising starter, Prawn Rissois is a popular snack served at Christian weddings, handed down by the early Portuguese dwellers.

Ingredients
250gm prawn    
5gm coriander leaves
75gm onion 
5gm green chilli
5gm garlic
5gm ginger
Salt, as required
Pepper powder, to taste
Lemon juice from one lemon
75gm semolina or bread crumbs
1 egg white
Oil to fry

For the dough

175gm flour
10gm butter
1 egg

Preparation
Wash and clean the prawns
Sauté the prawn with chopped onion, green chilli, ginger, garlic, chopped coriander leaves, lemon juice and season.
Make a dough with flour, egg, butter and salt. Roll to 3mm thickness and cut 3 inch diameter discs
Fill the discs with prawn mixture. Fold in half moon shapes to seal. Coat with egg and then roll in semolina
Deep fry till golden brown
