The very dependable semolina kesari that is made in a jiffy, and is in everyone's good books! Rava, blended in proportionate quantities of ghee, milk and nuts, makes the sweets a perfect addition to your Diwali preparations.
Ingredients
¾ cup ghee
1 cup rava (semolina)
2 cups milk
2 cups sugar
1 pinch saffron mixed with 2 tsp milk
½ cup cashew nuts
¼ cup raisins
1 tsp cardamom powder
Preparation
Fry the rava in 2 spoons of ghee
When the rava turns slightly brown, mix well so that no lumps are formed
To this, add the sugar and keep stirring
Keep adding the remaining ghee little by little to this mixture
Add the saffron paste, the cashew nuts, raisins and the cardamom powder
The mixture should thicken and come off easily from the sides of the pan
Remove from the fire and spread it onto a greased plate to set
Once it cools down, cut into desired shape. You may also decorate using dry fruits
