Tapioca with Chicken

Tapioca cooked with chicken, spices and coconut, garnished with coriander and curry leaves and mashed together to a mix, this dish is a treat for your taste buds.

Ingredients
1 kg tapioca
Oil, as required
1 tbsp ginger, crushed
1 tsp garlic, crushed
2 onions, chopped
4 green chillies, chopped lengthwise
1 tomato, chopped fine
1 tbsp coriander powder
1 tbsp red chilli powder
½ tsp turmeric powder
½ tsp fennel powder
½ tsp garam masala
250gm chicken, cut to pieces
1 onion, finely chopped
½ cup coconut, grated
A few curry leaves
A few coriander leaves
Salt, to taste

Preparation
Skin and cut the tapioca to pieces. Cook in water, drain and keep aside
Heat oil (or ghee) in a pressure cooker and sauté the ginger and garlic, followed by onions, green chillies, and tomato
Now add the coriander powder, red chilli powder, turmeric powder, fennel powder, garam masala and salt, stirring all the while
Now it€™s time for the chicken to go in along with two cups of water
Add the boiled tapioca, cover and cook until three whistles
Meanwhile, heat a little oil in a pan and fry the one finely chopped onion until golden brown. Keep aside
Stir fry the coconut and curry leaves in the remaining oil in the pan and keep aside
Uncover the cooker and thoroughly stir the contents
Add in the fried coconut and curry leaves
Transfer the contents to a plate and garnish with the fried onion and coriander leaves. Serve hot
