Vadi is an easily made maida snack popular in certain parts of Kottayam district. This crunchy, chewy maida sticks are best served with black tea. Dip the sticks in the tea before taking a bite, you won't regret it a bit.

Ingredients
1 ½ cup maida
½ cup water
5 tbsp oil
3 tsp shallots
2 tsp garlic
1 green chili

Salt as required

Preparation
Crush shallots, ginger and green chili using a pestle and mortar
Smear oil on your hands
Pour the oil to the flour and mix well using hands
Add the crushed mixture and salt to the dough
Add enough water to make a thick dough and knead well
Spread some flour on a flat surface
Pinch out a ping pong ball sized amount from the dough
Roll it on the flat surface to make around 20 centimeters long sticks
Heat oil in a pan and fry them until they turn golden color
Serve hot along with black tea
