Chicken pulao

Having some unexpected guests? Throwing a quickly-planned party at home? The kitchen rush would usually make you go insane as there is little time left and lots of things to take care of before serving the food. Well, not anymore. With this easy microwave chicken pulao recipe, you can do some hands-free cooking and whip up the perfect main course in less than an hour. Only an expert would be able to tell the difference between the pulao cooked on stove and that using a microwave oven.

Ingredients
1 cup basmati rice, soaked
250 gms of boneless chicken, cut into pieces
½ cup chicken stock
1 onion, chopped
2 tomatoes, chopped
2 tbsp yogurt
2 tbsp ghee
½ tsp chili powder
¼ cup ginger-garlic paste
3 cardamoms
1 inch long cinnamon stick
1 bay leaf
¼ tsp cloves
Salt as required

Preparation
Marinate the chicken with yogurt, ginger-garlic paste sand salt for 1 hour
Mix onions, ghee, cardamoms, cinnamon, bay leaf and cloves together in a large microwave safe bowl
Cook them in the microwave oven at 'high' for 2 minutes
Add chili powder and tomatoes to the bowl
Mix well and cook them again in the oven at 'high' for 5 minutes
Now add the marinated chicken to the bowl
Cover the bowl and cook at 'high' for 4 minutesAdd cleaned rice and salt to the bowl
Pour in the chicken stock
Cover the bowl, put it back to the oven at 'high' for 20 minutesTake the bowl out, sprinkle some ghee over the pulao
Serve hot with a raita of your choice
