Crispy bird's nest with paneer

'Kilikoodu' or bird's nest is an innovative dish which is crispy, spicy, and delicious. Vermicelli, cooked potatoes, and paneer are the main ingredients in this dish which can be easily made. Paneer could be replaced by eggs or meat, as per one's preference, to fill the crispy nests. Bird's nest tastes incredible with coriander chutney.

Ingredients
2 potatoes (cooked and mashed)
100 gms green peas
1 tbsp green chillies
1/2 tsp ginger
1/2 tsp chilli powder
1/2 tsp garam masala
1 tsp salt
250 gms paneer
1/2 cup coriander leaves
2 tsp all purpose flour (maida)
Vermicelli as required

Preparation
Cook and mash the potatoes
Add green peas, ginger, green chillies, chili powder, garam masala, paneer, and salt
Mix well
Add coriander leaves
Mix well
Keep it aside
To make 'paneer' eggs
Mash paneer well
Make small balls
Heat oil in a pan
Add the paneer balls and fry for 10 minutes
In a bowl, mix the flour purpose flour (maida) with 2 spoons of water
From the previously prepared potato mix, make small balls
Shape these balls into the shape of a cup
Dip these potato cups in the flour batter
Coat it with roughly crushed vermicelli
Keep it in the fridge for 1 hour for it to set
Heat oil in a pan
Add the potato cups
Fry until crispy and golden brown
Smear some coriander chutney inside the fried potato cups
Place the paneer balls inside it
Garnish with coriander leaves
