Malai chicken vermicelli pulao

Vermicelli is often used to make Kerala payasam. But have you ever tried using the same to make pulao? If not, here is a recipe devised by Sahna Salim, the winner of Double Horse Onmanorama HomeChef Chef of the Month title.

Malai chicken vermicelli pulao is an aromatic pulao recipe that is tossed with whole spices and chicken. The roasted vermicelli, when mixed with chunks of chicken, makes it delicious. The curd added to this makes the vermicelli to have a nice soft texture.

Sahna Salim is a native of Kechery in Thrissur. For her, cooking is a way to happiness and satisfaction in the bustle of daily life. She experiments with rare combos and believes that cooking can make a person more relaxed. She started cooking at a very young age, getting influenced by various cookery shows.

Try this delicious dish by her along with raitha of your choice and you will not be disappointed.

Ingredients
1 cup Double Horse roasted vermicelli
To marinate chicken
200 gm boneless chicken
1 tsp pepper powder
2 tsp curd
1/2 tsp jeera powder
1/2 tsp garam masala
1 tsp ginger-garlic paste
2 green chillies
1 tsp kasuri methi
1 tbsp coriander leaves
1 tbsp pudina leaves
Salt as needed
3 tsp fresh cream
2 tsp grated cheese
1/2 tsp chaat masala
To sauté
1 tbsp ghee
1 1/2 tbsp oil
1/2 tsp cumin seeds
2 cardamom
1 bay leaves
1 cinnamon
1 onion
2 green chillies
Salt as required
1 carrot

Preparation
In a bowl, add boneless chicken, pepper powder, curd, jeera powder, garam masala and ginger-garlic paste
Mix well
Add green chillies, kasuri methi, coriander and pudina leaves, salt, fresh cream, grated cheese
Sprinkle chaat masala to this mixture
Combine the ingredients thoroughly so that the chicken gets the flavour while mixing it
Marinate the chicken and keep it in the fridge for 1 hour
Now, heat ghee in a pan
Add oil, cumin seeds, cardamom, bay leaves, and cinnamon
Add onion and green chillies and sauté them well till they turn translucent
Add salt and carrot
Mix well
Take out the marinated chicken and add it to this mixture
Mix it well and let it cook for sometime
Pour some water and close the lid of the pan for 5 minutes
Once the mixture gets thicken, add one cup of Double Horse roasted vermicelli
Cook the vermicelli in chicken gravy for 10 minutes
Open the lid and fluff up the rice in a bowl
Serve Malai chicken vermicelli pulao along with raitha to make it a complete meal

Notes
The curd must not be too sour.
