Discover Haryanvi cuisine's richness through khoya suhali

Haryana is well-known for its high quality milk products. It has many popular sweet delicacies that drip syrup and ghee. Let us find out how 'khoya suhali,' a typical Haryanvi sweet, is prepared.

Ingredients
1 cup maida
¼ cup oil
1 cup sugar
200 gms khoya/mava
5 cardamoms
4 tbsp rose water
50 gms dry fruits

Preparation
Take a large pan, mix the maida and oil and prepare a dough adding a little bit of water
When ready, it should feel similar to chappati dough
On obtaining the required constitution, keep aside the dough for 20 minutes
Then make lemon-sized balls of the dough
Each of the balls should be rolled to the size of a papad
Heat the oil, and fry the rolled dough till it turns brown in colour
Meanwhile, take the sugar in another vessel, add three-quarters cup of water and stir well
When the sugar dissolves completely, add rose water and cardamom to it.
Then add khoya/mava to this solution and stir again
If this is not properly done, the khoya/mava will float
Keep this solution on the stove and heat well. Before this sugar solution cools down, dip the fried maida delicacy into it and immediately remove
Spread the dry fruits over the delicacy
The dish tastes best when consumed after 12 hours
