Recipe of the day: Mat samosa

Samosa sheets are twisted in an intricate and beautiful pattern to make this unique samosa. The tasty filling is made with keema chicken loaded with spices.

Ingredients
2 tsp coconut oil
1/4 tsp cumin
1 tsp ginger (crushed)
1 tsp garlic (crushed)
1 shallot (chopped)
1/2 tsp coriander powder
1 tsp chili powder
1 tomato
1/4 tsp garam masala
1 tsp salt
250 gms chicken keema
For the samosa sheet
2 cups all purpose flour (maida)
1 tsp salt
1 tbsp vegetable oil

Preparation
Heat coconut oil in a pan
Add cumin seeds, crushed ginger and ginger
Sauté well
Add shallots and sauté
Add coriander powder and chilli powder
Mix well
Add diced tomato, garam masala and salt
Stir until the tomatoes are softened
Add chicken keema and stir for 10-12 minutes until the water is reduced
Keep aside the cooked chicken keema masala to cool down
For samosa sheet
Mix the all purpose flour, salt and vegetable oil into soft dough
Make balls and roll into thin sheets
Cut into rectangular shaped pieces
Cut the rectangular sheets again into two
Place the sheets crossed
Place the filling on the centre and twist as if twisting palm leaves for roofing
Heat oil in a pan
Add the samosas and deep fry until crisp and golden
Serve hot with ketchup or coriander chutney.
