Special achari ghosht: A spicy delicacy from Pakistan

Achari ghosht is a spicy meat dish which has the unique flavours of pickle. 'Ghosht' means meat and 'achari' refers to the pickle flavour of the masala in which it is cooked. The dish tastes amazing with roti, naan or white rice.

Ingredients
For the pickle masala
1 tbsp coriander
1 tsp cumin
2 tsp fennel
1/2 tsp mustard seeds
1/4 tsp fenugreek
Salt as required
For the gravy
5 tsp oil
2 cups onion (finely chopped)
3 tsp ginger - garlic paste
1/2 cup tomatoes (diced)
1 cup yogurt
1/4 cup (50 gms) pickle masala
2 tsp chilli powder
500 gm chicken/ mutton (cut into curry pieces)
Water as required
For pickle stuffed chillies
1 tbsp lemon juice
1 tbsp pickle masala
4 -5 green chilies

Preparation
In a heated pan, add coriander, cumin, fennel, mustard seeds, fenugreek, and salt
Roast well
Grind this into a fine pickle masala powder
Heat oil in a pan
Add onions and sauté well
Add the ginger - garlic paste
Sauté until its raw smell is off
Add the tomatoes
Stir well
Mix the pickle masala in the yougurt
Add this mixture when the tomatoes soften up
Add chili powder
Mix well
Add chicken/mutton pieces
Pour some water and mix everything well
Cook with the lid on
In a bowl, mix pickle masala and lemon juice
Split the green chillies in half
Fill it with the pickle masala-lemon juice mixture
Add these stuffed green chillies into the cooked chicken/mutton
Cook for 5 more minutes
Tastes best when served hot with roti or naan.
