Try this special African jollof rice

Jollof, made with tomatoes and rice, is a staple at many African provinces. It can be relished even without the accompaniment of a side dish.

Ingredients
300 gm rice (soaked)
1 tsp garlic (chopped)
1 tsp ginger (chopped)
1 onion (sliced)
1 cup tomatoes puree
2 cups tomatoes (diced)
Oil as required
8 garlic cloves
1 red capsicum
2 red chillies
1 tsp paprika powder
1 tsp curry powder
1 tsp black pepper powder
1 tsp salt
1 tsp thyme
1 bay leaf
Vegetable stock as required
1 cup capsicum (diced)
1 cup carrot (diced)
1 cup sweet corn
Parsley as required

Preparation
Heat oil in a pan
Add chopped ginger and garlic
Sauté well
Add sliced onions and tomato puree
Stir well and keep it aside
In a blender, add diced tomatoes, garlic cloves, diced red capsicum, onions and red chillies
Pour a bit of water and oil into it and grind into a fine paste
Add this paste into the previously prepared mixture
Add paprika powder, curry powder, black pepper powder, salt, thyme and bay leaf
Mix well
Add some vegetable stock and soaked rice
Add diced capsicum, carrots and sweet corn into it
Cook for 15 minutes with lid on
Garnish with chopped parsley
Serve hot with green salad.
