This recipe brings together two ingredients that spell Christmas – rum and fruits! Most have heard of rum fruit cakes but cupcakes will stand out on your serving table. The preparation uses dry fruits soaked in rum or whiskey for a month or two in a jar. The intoxication smell of these soaked fruits will take over your kitchen when you open that jar before baking. As our chef puts it, 'nothing smells more like Christmas' than this! Don't worry if you did not prepare months ago as dry fruits soaked overnight will also do the trick.

The preparation is so simple that you may even involve your kids in the baking and turn it into a quality family time. Ingredients
120 gms maida
100 gms sugar powder
85 gms butter
2 eggs
100 gms dry fruits soaked in rum
½ tsp baking powder
A few drops of vanilla essence

Preparation
Sieve maida and baking powder
Beat butter and sugar until light and fluffy
Add the beaten eggs a little at a time along with the dry fruits and vanilla essence
Fold in the maida and pour into cupcake liners
Bake at 180°C for 15 minutes.
