3 eggs

1 green chili
1 onion, sliced
1 sprig curry leaves

2 tbsp coconut oil

½ tsp mustard seed
½ tsp fenugreek seeds

1 tsp sliced ginger
1 tbsp sliced garlic
2 green chilies sliced
1 sprig curry leaves

2 finely sliced large onions

½ tsp turmeric powder
Salt as required

1 tomato, sliced

2 cups of coconut milk
Preparation
Heat oil in a frying pan
Break the eggs and pour them into the pan as if for a bull€™s eye
Grind ingredients under the section no.2
Sprinkle them on top of each bull€™s eye and keep aside
Heat oil in another pan and splutter mustard seeds
Add fenugreek seeds
Add ingredient no.6 and saute
Add onion to it and saute well
When the onion slices turn brownish, add turmeric powder and salt
Add sliced tomato to the pan and saute
When the oil becomes clear, add coconut milk and stir
Bring to a boil
Place the bull€™s eyes carefully on top of the curry, serve hot
