Yam-beans stir fry

Plus, you can always experiment with whatever you rustle up in your kitchen. Just like this elephant foot yam and long yard beans stir fry. This easy “mezhukkupuratti” made of yam is just as yum as ever.

Note: Elephant foot yams are known for causing itchiness and irritation on skin when they come into contact. It is advisable to wear gloves while slicing them.

Ingredients
2 cups of elephant foot yam sliced into 1 inch pieces
1 cup long yard beans cut into 1 inch pieces
1 onion, thinly sliced
8 green chilies, sliced
2 tbsp oil
1/4 tsp turmeric powder
1 sprig curry leaves
Salt as required

Preparation
Boil yam in a pot or saucepan
Add salt and turmeric powder to the pot
When the yam gets cooked, drain it
Heat oil in a pan
Add sliced onion, green chilies and curry leaves in it, saute well
When the onion changes color, add beans to the pan
Stir fry till the beans are cooked
Now add the cooked yam slices, stir well
When the pieces are lightly fried, take the pan off the stove
Serve with rice
