Monsoons are the best times to have the your plates filled with good seafood, for the produce is aplenty. And what better than roasted and rich prawns to sink your teeth in?

Ingredients
½ kg prawns, cleaned
1 small tsp red chilli powder
1 small tsp coriander powder
1 pinch pepper powder
1½ tbsp, finely chopped onions
1 small tsp, finely chopped ginger
20 garlic pods
2-3 tamarind pods
Curry leaves, as required
Salt, as required
¾ cup coconut sliced thin


For seasoning


1 tbsp coconut oil
1 small tsp mustard seeds
¼ cup onion, sliced long
Curry leaves, a handful

Preparation
Mix the red chilli powder, coriander powder, pepper powder, finely chopped onions, finely chopped ginger, garlic, pot tamarind, curry leaves, salt and sliced coconut
Mix this with the prawns and let it boil in water for some time. Make sure it does not get over cooked
The prawns must be cooked well and the masala must be intact on it. Once that is done, take it off the flame
Now, for seasoning, take a pan and heat oil in it. Add mustard seeds and wait till it splutters
Add the onions and sauté till it becomes golden brown in colour
When it is roasted, add curry leaves and the cooked prawns
Sauté well until the prawns are also roasted
Serve this dish hot
