Vegetable uthappam


Though nutrition experts say that one shouldn't skip breakfast, many find it difficult to whip up a delicious and nutritious breakfast as they are busy getting ready for the office. Try out this easy recipe of nutritious uthappam which can be packed in tiffin boxes and had in offices or schools.

Oil as required
½ litre dosa batter
1 cup onion (finely chopped)
1 cup tomatoes (finely chopped)
3 green chillies (finely chopped)
¼ cup coriander leaves (finely chopped)
Salt as required

Rub oil on a hot tawa
Pour a spoonful of dosa batter and spread
Mix the onions, tomatoes, green chillies, coriander leaves and salt
Spread this mixture on top of the dosa
Sprinkle some oil or ghee before flipping the dosa
Allow the dosa to cook on both sides
Tastes best when served hot.
