Kerala style dry chicken roast with minimal oil

Try out this healthy recipe of special chicken roast which has just a bit of oil in it. The dish is rich and delicious, with the goodness of coconut milk in it.

Preparation
750 gms chicken
Coconut milk (extracted from a whole coconut)
3 cardamom pods
Small piece of cinnamon
3 cloves
½ tsp fennel seeds
½ tsp cumin
2 green chillies
Small piece of ginger
20 shallots
5 cloves garlic
A bunch of curry leaves
½ tsp turmeric powder
1 tsp garam masala
1 tsp black pepper powder
2 tsp Kashmiri chilli powder
Half of a lime
2 tsp coconut oil
Salt as require

Ingredients
Roast the cardamom, cinnamon, cloves, fennel seeds and cumin in a pan
Grind it into a fine powder when it cools down
Into a blender add green chillies, ginger, shallots, garlic and curry leaves
Grind it into a paste
Mix the powdered spices with the previously prepared paste and also garam masala, turmeric powder, pepper powder, Kashmiri chilli powder, lemon juice, coconut oil and salt as required
This is the special marinade
Marinate the chicken pieces with this marinade 
Keep the marinated chicken pieces aside for at least 30 minutes
Heat the coconut milk in a vessel
When the coconut milk begins to bubble up add the marinated chicken
Cook on low flame
When the coconut milk begins to evaporate roast the chicken well by flipping it on all sides.
