Tomato thokku is a delicious dish that could be prepared very easily using the ingredients that are commonly available in the pantry.

Ingredients
1 tsp mustard seeds
1 tsp fenugreek seeds
4 tbsp sesame oil
Curry leaves as required
6 tomatoes
3 tsp chilli powder
1 tsp turmeric powder
1 ½ tsp salt
3 tbsp tamarind
Preparation
Dry roast the mustard and fenugreek seeds
Grind them into fine powder
Heat sesame oil in a pan and splutter a teaspoon of mustard seeds
Add the curry leaves and roast
Into it add the chopped tomatoes
Now add chilli powder, turmeric powder and salt
Mix well
Cook for 10 minutes with the lid on
Pour in the tamarind water and allow it to boil
Keep stirring and sautéing until the water evaporates and the dish thicken up
Add the previously powdered mustard and fenugreek seeds
Mix well
Store in air tight containers.
