Lady's finger or okra is one of the favourite veggies for vegetarian lovers. Fresh okra stuffed with flavoursome masala and fried to a crisp is a widely loved recipe in many places. Check out the recipe of spicy lady's finger fry.

Ingredients
15 okras (Bhindi or lady's finger)
2 tbsp coriander powder
2 tsp cumin powder
1 tsp amchur or dried mango powder
1 tsp garam masala
¼ tsp turmeric powder
Salt as required
4 tbsp oil
Lemon juice as required
Coriander leaves as required

Preparation
Wash the lady's fingers and pat them dry using a piece of cloth
Cut the okras along the length
Prepare the stuffing by mixing coriander powder, cumin powder, dried mango powder, garam masala, turmeric powder and salt in a bowl
Fill this masala stuffing in the okras
Heat 2 tbsp oil in a pan
Place a layer of stuffed okra in the pan
After 2 minutes, lower the flame and cook with the lid on
Flip the okras and cook for 2 more minutes with the lid
Stir and move around the okras occasionally so that they wouldn't get stuck to the bottom
The okras would take at least 15 minutes to get cooked completely
Take out the cooked okras and place them in the serving dish
Add some lemon juice and garnish with chopped coriander leaves just before serving
