Rawther style biryani with soya chunks

Biryani is one of the most popular rice-based dishes not only in India but South Asia as well. It has a beautiful medley of aromas and flavours. Biryani, though usually made with meat, is also made with vegetables, fish, eggs, paneer (cottage cheese) mushrooms etc.

Let's see how to make Rawther style biryani with soya chunks. This recipe is excellent to pair with curd chutney and green chutney.

Ingredients
Jeerakashala rice - 1 kilogram
Water
Oil - 1 cup
Ghee - 100 grams
Onion - 4 nos
Tomato - 4 nos
Garlic - 2 cloves (crushed)
Ginger - 2 pieces (crushed)
Shallots - Two handfuls (crushed)
Green chillies - 4
Cinnamon - 3
Cloves - 3
Soy Chunks - 100 grams
Lemon - 1
Coriander, Mint
Chili Powder - 5 tablespoon
Salt to taste

Preparation
Wash the rice and drain the water and set aside
Soak the soya chunks for half an hour and wash thoroughly to drain the water
Add chilli powder, salt, half a lemon juice and mix well and leave for 1/2 hour
Crush small onions, garlic, cinnamon, cloves, cardamom and ginger
Heat the biryani pot and pour half of the oil and ghee
Stir fry finely chopped onions and green chilly
Add shallots to it and stir fry
Add garlic, ginger and crushed spices and stir fry
Add tomato and stir well and cover for two minutes
When the tomatoes are cooked well, add the soy chunks coated in masala and mix well and cover for two minutes
Add enough water required to cook soya chunks
Check the taste and add salt or spices if required
After cooking the soybeans, add the remaining water and bring to a boil over medium heat
Add half a lemon juice and stir well
Add rice and cook over high flame for the first 5 minutes and then medium flame for the remaining time
If the rice is not cooked when the water dries, pour some more water and cook
Sprinkle chopped mint and coriander leaves on top of the rice and pour the remaining ghee on top of an iron pan and dum cook for 15 minutes
Fifteen minutes later, stir and dum cook for another fifteen minutes
Then stir the rice from one side and start serving.
The delicious soya chunks biryani can be served with curd and green chutney.
