Healthy wheat banana cake

Ripe bananas that have blackened skin are often thrown away. However, not many know that these bananas are loaded with nutrition. Bananas that have blackened skin are store houses of antioxidants. This helps prevent cancer, high blood pressure and acidity. Here is the recipe of banana wheat cake that is made without adding sugar or all purpose flour.

Ingredients
2 robusta bananas
½ cup jaggery
½ cup water
½ cup yoghurt or 1 egg
¼ cup vegetable oil
1 cup wheat flour
1 tsp baking powder
½ tsp baking soda
½ tbsp corn flour
¼ tsp cinnamon powder
2 tbsp chopped almonds
2 tbsp chopped pistachios

Preparation
Melt the jaggery by boiling it in ½ cup water
Allow the jaggery syrup to cool down
Mash the over ripe bananas
Into this pulp add cooled jaggery syrup, yoghurt and vegetable oil
Beat well using an electric beater
Sift wheat flour, baking powder, baking soda, and corn flour and cinnamon powder
Add these dry ingredients into the banana yoghurt mix
Fold well
Sprinkle chopped pistachios and almonds
Mix well
Pour this batter into a greased cake tin
Bake for 40 minutes in 180 degree Celsius
Enjoy delicious and moist wheat banana cake with tea or coffee.
