Butternut squash soup is a tasty and nourishing soup that is enjoyed in the western countries during the fall season. It is a vegetable that belongs to the family of pumpkin. Here is the pretty simple recipe of butternut squash soup.

Ingredients
1 butternut squash
2 tsp olive oil
Salt as required
Pepper as required
1 onion (sliced)
5 garlic cloves
1/8th tsp nutmeg
4 cups vegetable broth
Coriander leaves

Preparation
Cut the edges off the butternut squash
Cut it in half
Remove the pit
Rub olive oil on the butternut squash
Sprinkle salt and pepper
Bake the butternut squash for 40 – 50 minutes on 220 degree Celsius
Allow the baked butternut to cool down
Scoop out the cooked flesh into a bowl
Heat 1 tbsp oil in a pan
Sauté onion and garlic
Add salt as required
Transfer these into a food processor
Add the cooked butternut squash too
Add the nutmeg powder
Blend well
Pour the vegetable broth as required
Transfer this into a pan
Add vegetable broth as required in order to adjust the consistency
Heat the soup with the lid on; however, do not boil it
Garnish using coriander leaves
Enjoy the hot butternut squash soup.
