Ingredients
4 eggs
1 onion
2 Thai red chillies
1 cup celery
1 cup coriander leaves
1 tomato
5 – 6 shallots
2 tbsp fish sauce
3 tbsp lemon juice
2 tbsp sugar
Oil to fry

Preparation
Heat oil in a pan
Add the eggs into the hot oil; the flame should be medium
Fry the eggs for 1 -2 minutes until they are crispy
Set them aside to be used later
Take chopped onion, red chillies, celery, coriander leaves, shallots and tomato in a salad bowl
Add the crispy fried eggs
Mix well
Now sprinkle fish sauce, lemon juice and sugar
Give everything a good mix
