Fried pathiri

Fried pathiri is a tasty dish that could be enjoyed as an evening snack or with curries. Check out the pretty simple recipe of fried pathiri.

Ingredients
1 cup rice flour
1 ½ cups water
2 tbsp ghee
¼ cup grated coconut
5 shallots
Salt as required
1 tsp fennel seeds
2 sprigs curry leaves
1 tsp sesame seeds
¼ cup all-purpose flour
Coconut oil to fry

Preparation
In a thick bottomed vessel, boil water, 1 tsp ghee and some salt
Lower the flame when the water boils rapidly
Add finely powdered rice flour
Mix well
Turn off the flame and keep aside for it to cook down
Crush grated coconut with fennel seeds and shallots
Into the rice, mix add all-purpose flour, crushed coconut mix, sesame seeds, and finely chopped curry leaves
Mix into a soft dough
Roll the dough balls with half centimetre thickness
Cut into perfect round shapes using a glass or a plate
Heat coconut oil in a pan
When the oil gets hot, lower the flame
Add the pathiri
Fry them until golden brown
Enjoy the fried pathiri with chicken, meat or egg curries.
