Try this traditional fruit cake for Christmas

Christmas isn't Christmas without the plum cake which is also known as fruit cake. Made with dry fruits and nuts soaked in rum, Christmas cake is rich, super moist and yummy!

Ingredients
1 ½ cup maida
1 tsp baking powder
½ tsp baking soda
½ cup brown sugar
½ cup normal sugar (for caramelising)
1 to 1 ½ cup dry fruits (soaked in rum for 4 months)
1 tsp vanilla essence
1 tsp orange essence
3 eggs
100 gm butter (unsalted)
¼ cup Sunflower oil
1 tsp lemon juice
1 tsp rum

Preparation
Before mixing ingredients for the cake, caramelise the sugar
In a mixing bowl, add butter and beat it properly
In it, add brown sugar, and beat it
Now, add eggs one after the other and beat them properly
Add vanilla essence, orange essence caramelised sugar and beat it. Also, add the vegetable oil and mix it thoroughly
Add maida, baking powder and baking soda into this mixture. Mix them
Now, add the dry fruits soaked in rum. (How to soak: Dry fruits like dates, glazed cherries, mixed dry fruits, orange zest is mixed with orange marmalade and black currant jam. Finely ground bay leaf, cloves, elaichi, nutmeg and mix the above mixture along with ½ cup honey and 2 cups rum in an airtight container. Keep it for 3-4 months.)
Add some cashew nuts and almonds and mix them evenly. Also, add lemon juice
Pre-heat the oven at 180 degree Celsius
Transfer the cake mixture to an 8-inch baking pan. Spread it evenly and tap it
Garnish it with some raisins, nuts, almond and dry fruits
Keep the pan in the oven for 55 minutes
Once taken out of the oven, keep the cake to cool down
Later, wet the surface of the cake with 1 tsp rum
Christmas fruit cake or plum cake is ready to be relished.
