Kadamba sambar – An absolute delight from Tamil wedding feasts

Kadamba sambar or the Tamil Nadu style wedding sambar is loaded with flavours. It tastes amazing with idli, dosa and rice too. Check out the pretty simple recipe.

Ingredients
10-12 shallots
1 onion
1 tomato
1 drumstick
1 egg plant
2 beans
1 small cup pumpkin (cut into pieces)
1 cup toor dal/pigeon pea (boiled and mashed)
1 gooseberry sized ball of tamarind (soaked)
2 tbsp coconut oil
¼ tsp fenugreek
1 tbsp urad dal/black gram
¼ tsp asafoetida powder
2 dried chilies
2 tbsp sambar powder
½ tsp turmeric powder
Curry leaves
Coriander leaves
Salt as required

Preparation
Heat coconut oil in a pan
Splutter the mustard seeds
Roast the fenugreek, urad dal, dried chilies and curry leaves
Now saute the shallots
Add the asafoetida powder too
Saute the onions
Add the tomato and turmeric powder
Mix well and cook
Into it add drumstick, egg plant, beans and pumpkin
Add the sambar powder
Mix well
Pour the tamarind water, some plain water and add salt
Give everything a good stir
Cook until the veggies are almost done
Now add the cooked and mashed toor dal
Allow the sambar to thicken up
Finally, garnish with chopped coriander leaves
Delicious and aromatic kadamba sambar is ready
