Wheat-banana sweet vada

Bananas are rich in protein, calcium, vitamins and essential minerals too. Including ripe plantains in the daily diet of kids would make them energetic and healthy. Countless dishes could be made using ripe plantains which is an incredibly versatile ingredient. Check out the easy recipe of ethapazham vada, a sweet evening snack made with ripe plantains, coconut and wheat.

Ingredients

2 ripe plantains
½ cup grated coconut
¼ cup jaggery
½ cup wheat powder
1 tsp cardamom powder
1 tsp cumin seeds
2 tsp ghee
A pinch of baking soda
Oil to fry

Preparation

Steam the ripe plantain and remove the seeds
Mash the steamed plantain using a fork
Into it, add grated coconut, jaggery, cardamom powder, cumin and baking soda
Mix well
Add wheat powder slowly
Mix into soft dough
Do not add water as the moisture from the plantain is enough
Add ghee and mix again
Rub oil on your palms
Scoop small balls from the plantain mix and shape into vada
Heat oil in a pan
Fry the plantain vada in hot oil until they turn golden brown
This tea time snack is delicious and filling.
