Try this sweet palooda for Iftar

This sweet porridge could be enjoyed hot or cold. The mild flavour of onion and the spices makes it extra special. Here is the recipe.

Ingredients

½ litre milk
2 tbsp all-purpose flour
¼ onion
3 cardamom pods
2 cloves
1 piece cinnamon
3 tbsp sugar
1/4 cup water
2 tbsp ghee
25 gm cashews

Preparation

Wrap the onion, cardamom, cloves and cinnamon stick in a soft muslin cloth
Insert this pouch in half litre milk
Add sugar too
Now, boil this infused milk
Add ¼ cups of water to it when the milk starts to boil
Simmer on medium flame for 10 minutes after the milk boils rapidly
Mix the all-purpose flour in some water
Take out the spice pouch from the milk
Now add the all-purpose flour mix into the milk
Mix well until the milk bubbles up
The palooda shouldn’t be too loose or thick
Take it off the flame after it has reached the right consistency
Heat 2 tbsp ghee in a pan
Fry the cashews
Add the fried cashews and the ghee into the palooda
Give everything a good mix
Add finely chopped cashews if you refrigerate the palooda; there is no need to fry them in ghee then.
