Avial is a wholesome dish that is loaded with veggies. However, cutting and prepping these veggies is quite a task. Here is a fairly easy recipe of avial in which just two types of vegetables have been used.

Ingredients
2 cups yam (sliced)
2 drumsticks
1 small piece raw mango (you could add yoghurt instead)
5 green chilies
½ tsp turmeric powder
Salt as required
2 cups grated coconut
1 tsp cumin
4 shallots
Curry leaves
1 tbsp coconut oil

Preparation
Mix the yam, drumsticks, mango, green chilies, turmeric powder, salt and water in an earthen vessel
Close the lid and cook for 10-15 minutes
Crush the coconut with cumin, shallots and curry leaves
Add this mixture after the veggies are cooked
Cook for 5 more minutes on low flame with the lid on or until the raw smell of the coconut mixture is gone
Sprinkle a tbsp of coconut oil after turning off the flame
Allow the avial to rest for sometime before serving.
