Aval-pazham varattiyathu – a yummy traditional Kerala evening snack

It is always better to go for some quick, homemade snack over greasy junk food. Flattened rice cooked with plantain is a delicious and nutritious dish that could be served to children as an evening snack. Adding a pinch of sesame seeds would make it an excellent brain food. Check out this easy simple recipe for flattened rice and plantain snack.

Ingredients
1 cup aval/flattened rice
2 plantains
1 cup grated coconut
½ cup jaggery
1 tbsp ghee
1 tbsp sesame seeds
½ tsp cardamom powder

Preparation
Melt the jaggery in ¼ cup water
Strain the jiggery syrup and keep it aside
Toast the flattened rice in a thick bottomed vessel
Transfer the toasted flattened rice into a bowl
Heat ghee in the same vessel
Fry the cashews; keep them aside
Now roast the washed sesame seeds
Add the plantain pieces when the sesame seeds begin to pop
Close the lid and cook for 2 minutes
Into it add the jaggery syrup
Add the cardamom powder, toasted flattened rice and grated coconut
Mix well and turn off the flame
Finally, add the fried cashews and serve.
