There are different varieties of payasams available during Onam time in Kerala. Colocasia payasam is a unique dessert that could add the perfect sweetness to the grand Onasadya. Here is how to prepare it.
4 – 5 Colocasia
4 -5 tbsp jaggery
Milk extracted from half coconut
½ tbsp ghee
1 tbsp coconut shards
½ glass water
Clean the Colocasia and cut it into half-inch pieces
Cook the Colocasia in a pressure cooker until 4 -5 whistles
Open the lid only after the pressure has been completely released
Mash the Colocasia using a spatula
Turn on the stove
Add the third extract of coconut milk and jaggery
When it boils add the second extract of coconut milk
Turn off the stove when the payasam thickens
Finally, add the first extract of coconut milk
Meanwhile, heat ghee in a pan
Fry the coconut shards until they turn brown in colour
Add this into the payasam
Give everything a good mix.
