Add a hint of colour to your lunch menu with this palak rice

Palak rice aka spinach rice is a one-pot recipe that's the dream of anyone who wants to eat healthy yet tasty meals.

Not only is it aromatic, it's mildly spicy and rich in iron and goes right with both vegetarian and non-vegetarian side dishes. Check out the recipes.

Ingredients
1 cup basmati rice
½ cup shallots
100 gms palak
2 tsp ginger
4 garlic cloves
¼ cup coriander leaves
¼ cup mint leaves
1 tsp cumin seeds
1 tsp fennel seeds
4 green chillies
1 tsp chili flakes
2 tbsp ghee
1 tsp butter
Salt as required

Preparation
Soak the basmati rice for ten minutes
Cook the soaked rice by adding 2 cardamom pods, 3 cloves, 2 bay leaves and 2 cinnamon sticks in the water (This will add oodles of flavour to the rice)
Crush green chillies, ginger, garlic, coriander leaves, mint leaves, cumin and fennel seeds in a mixer jar
Heat ghee in a pan
Sauté the shallots
Add the crushed aromatics
Sauté for a minute
Now add chopped palak and salt as required
Mix well
Close the lid and cook for five minutes
When this is almost cooked, add the chilli flakes
Finally, add the cooked basmati rice
Sprinkle butter on top
Cook for five more minutes
Tasty and healthy palak pulao is ready
