The nostalgic vellayappam on plantain leaf: A no fuss recipe to make it in a jiffy

Appams made wrapped in plantain leaves have a unique flavor and can be enjoyed with delicious vegetarian and non-vegetarian curries.

Though they are different from the popular palappams in looks, the aroma is quite similar to it and gives you the happiness of a comfort food. In certain parts of Kerala, it's called ilayappam as it's made wrapped in plantain leaves. Here's the simple recipe:

Ingredients
2 cups rice
½ cup boiled rice
½ tsp yeast
1 tbsp sugar
1 tsp salt
2 glasses water
1 plantain leaf

Preparation
Soak the rice for a few hours
Grind the soaked rice along with boiled rice, yeast and sugar
Add salt too
Keep the batter aside for at least 8 hours for it to rise
Grease the appam pan with oil
Place the plantain leaf
Drizzle some oil
Pour the batter as required
Close the lid and cook.
