Everyone loves having their share of chakka varatti or jackfruit halwa during summer, but stirring up the traditionally popular dish wasn't considered an easy task, ever.
But, do you know the nostalgic dish can also be made in pressure cooker? If stored right, the dessert can stay tasty and healthy for a long time too. Check out the recipe for jackfruit varattiyathu:
¾ kg jackfruit
2 tbsp ghee
½ kg jaggery
1 tsp dried ginger powder
1 tsp cardamom
Melt and strain the jaggery
Pressure cook the ripe jackfruit bulbs with jaggery syrup until three whistles
Pour this into a vessel and cook on medium flame
Add ghee in intervals
Add dried ginger powder and cardamom when the mixture begins to thicken up
Store the jackfruit varattiyathi in air tight and dry containers
You could avoid dried ginger and cardamom if you do not like the flavor.
