Ingredients
Seeds of a whole pumpkin
3 cups water
2 tbsp olive oil
Salt as required

Preparations
Place the seeds in a colander and rinse using running water to clean them
Boil water in a saucepan
Add the pumpkin seeds and salt to the pan and keep it boiling for 10 minutes
Drain the seeds
Heat a pan and toss the seeds in it
When the water on the seeds evaporates, add the olive oil
Stir continuously till the seeds turn light brown in color
Remove the pan from the stove and let the seeds cool before eating
Tip: Sprinkle some garam masala while roasting the seeds if you want to spice it up
