Sweet potato: Here's how to add it to your daily diet

Sweet potato is packed with healthy carbohydrates, vitamins and protein as well. Nutrition experts say that having sweet potato for breakfast would help you start the day on an energetic note. This special sweet potato dish is delicious and is very easy to prepare as well. Spicy shallots – bird eye chilli chutney and a cup of hot black tea are the smashing combination for the dish. Check out the simple recipe for a sweet potato dish that can be added to your daily diet.

Ingredients
2 big sweet potatoes
¼ cup grated coconut
3 shallots
3 bird eye chillies
3 tsp chilli flakes
1 tbsp coconut oil
2 tsp mustard seeds
2 bunches of curry leaves

Preparation
Clean the sweet potatoes and cut into square chunks with the skin on
Cook the sweet potato pieces in the steam for at least 10 €“ 15 minutes
When they cool down, peel the skin off and cut into smaller pieces
Crush the grated coconut along with shallots, bird eye chillies and salt in a mixer
Heat coconut oil in a pan and splutter the mustard seeds
Add the chili flakes and curry leaves
When they begin to get fragrant, add the crushed coconut mixture
Stir for 2 to3 minutes to roast everything well
Now add the cooked sweet potato and mix well
Cook for 2 to 3 minutes with the lid on
Give the dish a good mix before serving it hot.
Bird eye chutney
You could easily prepare the spicy chutney by grinding 8 bird eye chillies, 5 shallots, 1 teaspoon vinegar, 3 teaspoons coconut oil and salt in a mixer.
