A fluffy, filling and yet healthy omelette for the diet-conscious

If you are pressed for time and yet need a filling homemade meal, there is nothing like an omelette that can satisfy you. A most basic dish in any newbie cook's arsenal, it can be prepared even by kids. Whip up a healthy and filling omelette with some carrots, tomato, curry leaves and more which can be found in any Kerala kitchen. Here's the recipe:

Ingredients
¼ cup oats (powdered)
4 tablespoons water
Salt (as required)
2 eggs
1 shredded carrot
½ savala (diced)
½ tomato (diced)
2 green chillis (cut into small, thin round-shaped pieces)
Curry leaves (as required)
1 small piece of ginger (diced)
½ teaspoon pepper (ground into fine powder)
¼ teaspoon turmeric powder
½ teaspoon chilli flakes
1 tablespoon coconut oil

Preparation
Pour four tablespoons water into the powdered oats and stir well
Beat and add the eggs, and all other ingredients and mix well
Pour one tablespoon of oil into a pan and heat it. Add the above egg mix into it and cook the same after closing the pan with a lid
When one side of the omelet is cooked through, turn it over, gently using a spatula, and similarly cook the other side
After some time slide the omelet onto a plate and serve it hot
