Bored of plum cakes? Bake Puducherry’s ‘vivikam cake’ for a change

Are you thinking of baking some variety cakes this Christmas instead of the usual plum cakes? You have a plethora of options to choose from the traditional Christmas desserts across Indian states. Vivikam cake aka Pondicherry cake, a traditional specialty of Puducherry, is considered a European import to the union territory. Here's how to prepare the yummy yet simple dessert.

Ingredients
5 eggs
½ kg sugar
½ kg semolina
1 tbsp ghee
150 gms butter
2 tsp vanilla essence
½ cup raisins
½ cup cashew nuts
¼ cup candied fruits
1 tsp caraway seeds
½ tsp baking powder
1 cup coconut milk

Preparation
Roast semolina with ghee till it gives out an aroma, keep it aside
Beat eggs with butter and sugar
In a bowl, mix the roasted semolina, egg mix, coconut milk, cashew nuts, caraway seeds, raisins and vanilla essence
Add baking powder to the mix, refrigerate the mix for a day
Preheat oven to 176 degrees Celsius
Bake the mix for 45 minutes in a circular baking pan
Once it cools, slice and serve
