Ingredients
Banana peels from 2-3 semi-ripe bananas
1 tbsp oil (vegetable, olive, or your preferred cooking oil)
1 tsp mustard seeds
1 tsp urad dal (split black gram)
1 tsp chana dal (split chickpeas)
1-2 green chillies, chopped
1/2 tsp turmeric powder
1 tsp sambar powder or curry powder
Salt to taste
Fresh coriander leaves for garnish (optional)
Preparation
Wash the banana peels thoroughly
Trim the ends and any tough, fibrous parts
Slice the peels into thin, bite-sized pieces
Heat oil in a pan over medium heat
Add mustard seeds
Once they start spluttering, add urad dal and chana dal
Sauté until they turn golden brown
Add chopped green chillies and sauté for a minute
Add the sliced banana peels to the pan and mix well
Stir in turmeric powder, sambar powder (or curry powder), and salt
Mix thoroughly.
Cover the pan and cook on low to medium heat for about 10-15 minutes, stirring occasionally
Garnish with fresh coriander leaves if desired
Serve as a side dish with rice
