Kerala-style coconut omelette with onion and curry leaves

A handful of freshly grated coconut can transform a simple omelette. In this Kerala-style recipe, grated coconut is mixed directly into beaten eggs along with onion, green chilli and curry leaves, giving the omelette a soft texture and a mild sweetness.
Unlike a regular omelette, this version has little bites of fresh coconut in every mouthful. The curry leaves and green chilli add a distinctly Kerala touch, while a drizzle of coconut oil brings everything together.
It takes just a few minutes to prepare and pairs beautifully with bread, chapati, rice or even a cup of hot tea.
Ingredients
- 3 eggs
- ½ cup freshly grated coconut
- 1 small onion, finely chopped
- 1 green chilli, finely chopped
- 1 sprig curry leaves, chopped
- ¼ tsp black pepper powder
- A pinch of turmeric powder
- Salt, as needed
- 1–2 tsp coconut oil
Preparation
- Crack the eggs into a bowl and beat well.
- Add the grated coconut, chopped onion, green chilli and curry leaves.
- Season with salt, black pepper powder and a pinch of turmeric. Mix everything well.
- Heat a pan and add a teaspoon of coconut oil.
- Pour the egg and coconut mixture into the pan and spread it gently into an even layer.
- Cook over medium-low heat until the bottom is set and golden.
- Carefully flip the omelette and cook the other side until the egg is completely cooked and the edges turn lightly crisp.
- Serve hot with bread, chapati or rice.
Tips for the perfect coconut omelette
- Use freshly grated coconut for the best flavour and texture. Avoid adding too much coconut, as the omelette can become difficult to flip.
- Cooking the omelette over medium-low heat helps the coconut toast gently without burning while allowing the egg to cook evenly. For an extra Kerala touch, use coconut oil instead of regular cooking oil.
- You can also add finely chopped ginger, shallots or coriander leaves according to your preference.
