Got some porotta and chicken ularthu in the fridge? Turn them into a delicious roll with a few simple additions. Flaky Kerala porotta is packed with spicy chicken ularthu, crunchy vegetables, creamy mayonnaise and a touch of ketchup, then rolled up and served warm.
It makes a quick snack, easy dinner or filling lunchbox option, especially when you have leftover chicken ularthu ready to go.
Ingredients
- 4 Kerala porottas
- 2 cups chicken ularthu
- 1 onion, thinly sliced
- 1 tomato, thinly sliced
- 1/2 cup cabbage, thinly sliced
- 2 tbsp mayonnaise (veg mayo if you are packing it for later)
- 2 tbsp tomato ketchup
- 1 green chilli, finely chopped
- 2 tbsp chopped coriander leaves
- 1 tsp lemon juice
- 1 tbsp oil
- Salt, as needed
Preparation
- Heat a pan and warm the porottas on both sides until soft and slightly crisp. Set aside.
- Heat oil in the same pan and sauté the sliced onion and green chilli until the onion turns slightly soft.
- Add the sliced cabbage and tomato. Season with a little salt and stir-fry for a minute or two, keeping the vegetables slightly crunchy.
- Add the chicken ularthu and mix well. Cook for 2–3 minutes until the chicken is heated through.
- Place a warm porotta on a flat surface. Spread mayonnaise and tomato ketchup over it.
- Place a generous portion of the chicken ularthu mixture in the centre. Sprinkle with chopped coriander leaves and a few drops of lemon juice.
- Fold the sides of the porotta over the filling and roll tightly.
- Serve the porotta chicken ularthu roll warm.
