Ingredients

  1. 4 Kerala porottas
  2. 2 cups chicken ularthu
  3. 1 onion, thinly sliced
  4. 1 tomato, thinly sliced
  5. 1/2 cup cabbage, thinly sliced
  6. 2 tbsp mayonnaise (veg mayo if you are packing it for later)
  7. 2 tbsp tomato ketchup
  8. 1 green chilli, finely chopped
  9. 2 tbsp chopped coriander leaves
  10. 1 tsp lemon juice
  11. 1 tbsp oil
  12. Salt, as needed

Preparation

  1. Heat a pan and warm the porottas on both sides until soft and slightly crisp. Set aside.
  2. Heat oil in the same pan and sauté the sliced onion and green chilli until the onion turns slightly soft.
  3. Add the sliced cabbage and tomato. Season with a little salt and stir-fry for a minute or two, keeping the vegetables slightly crunchy.
  4. Add the chicken ularthu and mix well. Cook for 2–3 minutes until the chicken is heated through.
  5. Place a warm porotta on a flat surface. Spread mayonnaise and tomato ketchup over it.
  6. Place a generous portion of the chicken ularthu mixture in the centre. Sprinkle with chopped coriander leaves and a few drops of lemon juice.
  7. Fold the sides of the porotta over the filling and roll tightly.
  8. Serve the porotta chicken ularthu roll warm.
