Pep up your dishes with these simple hacks

Ginger tea

A good, strong cuppa makes your day! It’s inducement enough to make you leap out of bed, curl up in your favourite chair with the dailies and that steaming cup of tea. But then, just a sip is enough to ruin your day. The tea tastes tepid. Good water spoiled!

How about a small piece of crushed finger while brewing tea? It will add to the flavour and aroma. This, and a few other kitchen tricks should make one’s dishes peppier.

- Don't throw in the tomatoes to the water while cooking sambar or rasam. Instead, puree it and add to the curry after the curry is almost done and boiling. It makes the gravy even more tasty.

- Adding a piece of raw papaya while cooking mutton will soften the meat.

- Frying paneer wouldn't always go as planned as there are chances for some sides to get overcooked or turn brown. Instead, add them to boiling water and cook well before adding the to curries and other dishes.

- It is hard to keep dairy products for a long period, even in refrigerators. There are some hacks that you can try to make them last longer. Warp paneer in blotting paper before storing to make them stay good for a longer period.

- Keep olive oil in dark coloured bottles to preserve its properties.

- Store rava (semolina) and rice flour in the fridge to preserve them longer.

- A small spoon each of rice flour and rava with the dough will make crunchier puris.

- Add a dash of lime extract to turn out crisp and snappy okra dishes.

- A big spoon of ghee to the vada batter that’s too watery will keep vadas from spluttering in oil.

- A bit of cornflour to the dough will make for crisp samosas.

Uzhunnu vada

- Try coarsely powdered cornflakes instead of bread crumbs for more colourful and crispier cutlets and fish.
