What arrived first: egg or chicken? The age-old argument still rages on and is bound to continue for years to come. But there are no doubts, whatsoever, over their taste; both are mouthwatering.

When hunger pangs strike, the obvious choice for a Malayali could be an omelette anointed with sliced onions and chopped green or red chillies. And while visiting a wayside eatery in Kerala, which always emanates a heady aroma of freshly cooked food, the first question could be 'single' or 'double,' meaning the omelette should be made of one egg or two eggs?

Egg masala curry is a delectable dish for those who have left Kerala shores for work or study. A handsome plate of this curry could be made in five minutes flat. Sweat some chopped onions and tomatoes in a frying pan for a while and crack in an egg, and the egg masala curry is ready.

There are some simple hacks to peel a hard-boiled egg. Put some salt and green tops of spring onions while boiling egg in water. Another option is to steam cook the egg, using an idli maker, for at least 12 minutes.

Eggs of different hues

Eggs comes in many colours and the fanciest egg is the one laid by Tinamou, a mountain hen. These eggs have a bright blue shell and at times the shell could be violet in colour. Some chicken eggs have a brownish tinge, and there is high demand for eggs with dark brown shells. The eggs laid by Rose Island Red and Plymouth Rock chickens, too, have brown shells.
